Este trabalho é fruto de uma pesquisa de mestrado, que foi realizada em 2017, em restaurantes do povoado Massagueira, município de Marechal Deodoro AL, região metropolitana de Maceió.A Massagueira é um polo gastronômico situado às margens da laguna Manguaba, que atrai moradores das regiões circunvizinhas, além de turistas que visitam o Estado. Sua importância econômica e social é inegável, gerando emprego e renda; como também são notórios os problemas ambientais causados pela grande rotatividade de pessoas, já que o povoado é pequeno e sem infraestrutura adequada.Um dos problemas ambientais verificados no povoado é o descarte não seletivo do lixo produzido pelos restaurantes; outro, não menos importante, são as redes de esgoto de alguns estabelecimentos, que descartam suas águas servidas na laguna Manguaba. A pesquisa teve como objetivo alertar sobre os problemas mencionados, visando criar uma consciência ambiental nos trabalhadores dos restaurantes.
